Brilliant brunch with bacon, avocado and chicken

Ingredients
  

  • 2 slices wholemeal bread
  • 1 large avocado
  • 4 rashers thick-cut smoked bacon
  • 1 egg
  • 2 Taste Inc. Spicy Fillets
  • dried chilli flake
  • non-stick spray
  • Ground black pepper to taste

Instructions
 

  • Set the oven to 200 degrees and preheat.
  • Once the oven has heated up, add the thick-cut smoked bacon to a rack or pan and cook for 20-30 minutes
  • After the bacon has been cooking for 10-15 minutes, put the two slices of wholemeal bread in the toaster.
  • Whilst they’re toasting, smash up the avocado in a bowl with a splash of lime juice until it forms a rough but smooth paste. Add a sprinkle of dried chillies as well as a dash of pepper to the avocado. Set aside.
  • Fry the egg in a frying pan with non-stick spray. Alternatively, if you prefer to use a cooking oil – use that. Adding a lid to the frying pan cooks the egg nicely without cooking the yolk – aka the good bit!
  • Now, the bacon and egg should be finished at roughly the same time. Now top the toasted bread with the avocado and then layer the bacon over.
  • Add two Taste Inc. Chargrilled Spicy fillets to one slice, and the fried egg to the other – and voila, you’ve got yourself a 10/10 breakfast!
