Spicy chicken quinoa – Quinoa is a super tasty snack, packed with protein and fibre, that’ll keep you energised and your stomach full. It’s the perfect quick snack if you’re feeling a little sluggish. It’s easy to prepare and can be made for the whole family to enjoy.

You can also cook chicken quinoa variations with a variety of spices and salsa! – Quinoa, Courgettes (Medium/Large), Baby Tomatoes, Spring Onion, Taste Inc. Spicy Fillets (Shredded), So, to start with, rinse the quinoa under cold running water, then tip it into a pan over medium heat and bring to the boil.

Slice the courgette into thick slices and fry in a pan to the side. ; Dice up the spring onions and tomatoes, then toss them into the pan.

Meanwhile, shred the Taste Inc chicken fillets.

Once the quinoa mix is ready, add the shredded chicken and courgette slices.

Drizzle some olive oil and a little lemon juice on top and season with pepper.
